200ml newly squeezed lemon juice
500g caster sugar

To make the Premix (makes 850ml, enough for 10)

To prepare the Syrup: Put the listed components into a pan, bring to a gentle boil, stirring so the sugar melts. After that, turn off the heat and let it to cool completely. Decant into a sterilised bottle, close it and store in the fridge, it will last for around four weeks.

To make Batch Mix: Combine every spirits and syrup in a large bottle, let it rest for 60 minutes, then filter it , ideally through cheesecloth, to ensure it's perfectly clear.

When ready to serve: Add 85ml from the premix to a stirring glass packed with ice, and agitate lightly for about 60 seconds to chill. Strain into a cold coupe glass or similar, decorate with a few cranberries and finish by giving it a quick spritz of mandarin oil above the glass.
